Rosehip

1 kg rosehips
0.5 litres water
1 kg sugar
25g citric acid
100g concentrated aronia juice


Chop or crush the rosehips, and simmer them in the water until soft. Strain the pulp through a fine sieve - important to remove all the prickly hairs that surround the seeds inside the hips. Add the sugar, citric acid, and concentrated aronia juice. Add one campden tablet, and bottle ready for use.
