Elderflower

200g elderflower petals
2 sliced lemons
1kg granulated sugar
40g citric acid
500ml water


Collect the elderflowers and separate from green parts of flower. This can be done on the tree, by selecting flowers whose petals are about to fall, or more laboriously after picking using scissors.

Make the syrup by pouring the boiling water onto the sugar and citric acid in a bowl and stirring with a whisk until all sugar is dissolved. Allow to cool. Add the elderflowers and sliced lemons. Cover and leave for 1 week, stirring daily. Strain and bottle. To improve keeping qualities add 1 campden tablet – or keep in fridge.
